Courgette Fritters with Tomato Sauce

Ingredients
Courgette Fritters
- 2 eggs
- 1 clove garlic crushed
- 3 courgettes grated, but not peeled
- 100 g parmesan cheese grated
- 125 g self-raising flour
- Salt & Pepper
- Oil for shallow frying
Tomato Sauce
- 250 g tomatoes
- 1 onion
- 1 clove garlic crushed
- 1 tbsp olive oil
- 125 ml water
- Salt & Pepper
Instructions
Tomato Sauce
- Peel and chop the onion finely.
- Fry gently in olive oil with a little salt, in covered pan, until softened and golden at the edges.
- Add chopped tomatoes, garlic and water.
- Cover and cook for 15 minutes.
- Remove lid and cook for further 5 minutes until thickened, stirring to prevent burning.
- Add salt and pepper to taste.
Courgette Fritters
- For the courgette fritters, mix all ingredients in a large bowl, adding enough flour to make a thick batter.
- Drop large spoonfuls into a frying pan and shallow fry on medium heat until brown underneath, turn over to cook other sides.
- Drain and serve with tomato sauce.
