This month’s fish recipe from Food Smart Dublin is Megrim with Lemon Butter.  When we think of eating sole, we think of Dover Sole and Lemon Sole. Megrim, or Cornish Sole as it is sometimes known, is a flat fish, not very appealing to look at but very cheap and very sustainable.  We need to ask our fishmongers for these fish – the power of the people.  If we ask, we will receive.  The recipe was incredibly easy and very quick, less than 10 minutes to have a delicious fish on the plate. I urge you to give this one a try, and then fill in the questionnaire on the Food Smart Dublin website to help Trinity with their research.
