Courgette Fritters with Tomato Sauce

Ingredients

Courgette Fritters

  • 2 eggs
  • 1 clove garlic crushed
  • 3 courgettes grated, but not peeled
  • 100 g parmesan cheese grated
  • 125 g self-raising flour
  • Salt & Pepper
  • Oil for shallow frying

Tomato Sauce

  • 250 g tomatoes
  • 1 onion
  • 1 clove garlic crushed
  • 1 tbsp olive oil
  • 125 ml water
  • Salt & Pepper

Instructions

Tomato Sauce

  • Peel and chop the onion finely.
  • Fry gently in olive oil with a little salt, in covered pan, until softened and golden at the edges.
  • Add chopped tomatoes, garlic and water.
  • Cover and cook for 15 minutes.
  • Remove lid and cook for further 5 minutes until thickened, stirring to prevent burning.
  • Add salt and pepper to taste.

Courgette Fritters

  • For the courgette fritters, mix all ingredients in a large bowl, adding enough flour to make a thick batter.
  • Drop large spoonfuls into a frying pan and shallow fry on medium heat until brown underneath, turn over to cook other sides.
  • Drain and serve with tomato sauce.
